Mushroom Fry

Ingredients:

400 gms Mushrooms
2 cups, sliced Onions
1 Capsicum, cut into triangles
2 Tomatoes, quartered
1 inch Cinnamon stick
2-3 Tbsp Oil
5 Cloves
2 twigs of Curry Leaves
Salt, as per taste
2 Tbsp Ginger Garlic Paste
2 Tbsp Fresh Coriander Leaves
1 Tbsp Red Chilli Powder
1 Tbsp Coriander Powder
1/4 Tsp Turmeric Powder
1 Tbsp Garam Masala Powder
1 Tsp Pepper Powder
Water as needed

Method:

In a pan, heat the oil on medium and saute the cinnamon, cloves and curry leaves for a minute

Add in the onions and saute well until translucent

Add the salt and mix well. Then add in the ginger garlic paste and saute till the raw smell goes

Add in the tomatoes and continue sautéing till they become soft. Add a sprinkling of water to prevent it from burning

Now add in the mushrooms and saute well until they start oozing water

Add the coriander leaves and red chilli powder, along with coriander powder, turmeric powder, garam masala and mix it all well for a couple of minutes

Now add 1/4 cup of water so that the masalas cook well and mix thoroughly

Continue cooking on medium to high heat and add the pepper powder

Then add in the capsicum and keep mixing till the water dries up

Garnish with coriander leaves and you’re all set to serve and enjoy with hot lachha parathas!
