Mango Shrimp
Ingredients:
200 gms Prawns, cleaned and deveined
1 large ripe Mango, diced
1 Tsp Garlic, chopped
1 small Onion, sliced
1 large Red Chilli, chopped
2 Tbsp Coriander Leaves
Pinch of Salt
Pinch of White Pepper
2 Tbsp Corn Flour
3-4 Tbsp Oil
For the Sauce:
1 Tbsp Sugar
1.5 Tbsp Soy Sauce
1/2 Tsp Vinegar
2 Tbsp Tomato Ketchup
2 Tbsp Water
Method:
Sprinkle the salt and white pepper over the prawns and add the corn flour. Mix till they’re well coated. Leave them for a few minutes
For the sauce, add all the ingredients and mix them well
Heat 2 Tbsp oil in a wok on medium and add the prawns one by one, when it’s hot
Fry on both sides for 2-3 minutes each until the prawns curl up. Once done, take them out onto a plate
Add 1-2 Tbsp oil to the same wok and add in the onion. In a few seconds add the garlic and red chillies, and saute for a few seconds
Add the prawns along with the sauce and stir fry them on medium to high heat for a minute
Turn off the heat, then add the mango and the coriander and mix it all well for 10-15 seconds before taking it out onto a serving dish
You’re all set to serve as it is or over some white rice!
