Dynamite Chicken
Ingredients:
For Chicken Marination:
500 gms Chicken Breasts, sliced into medium pieces
1 Egg
2 Tbsp Ginger Garlic Paste
1 Tbsp Light Soy Sauce
2 Tsp Red Chilli Powder
1 Tsp Dried Oregano Flakes
Salt to taste
For the Dynamite Sauce:
1/4 cup Mayonnaise
1/4 cup Tomato Ketchup
2 Tbsp Chilli Sauce
1/2 Tsp Red Chilli Powder
1/2 Tsp Pepper Powder
Other Ingredients:
2 Tbsp Refined Flour
1/4 cup Corn Flour
Oil for deep frying
4-5 Lettuce Leaves
1-2 Spring Onion Greens, chopped
Method:
Marinate the chicken and leave it to rest for 30 minutes
In the meantime, combine all the ingredients for the sauce together in a large bowl
After 30 minutes, add the corn flour and refined flour to the marinated chicken and mix it well
Heat oil in a deep vessel on medium and then slowly add in the coated chicken. Ensure they are well spaced in the vessel
Fry them for about 7 minutes until they turn golden brown. Then take them out onto a plate
Mix them in the bowl of the sauce until they are coated thoroughly
Plate them over the lettuce leaves, in a bowl or broad-mouthed martini glass
Garnish generously with spring onion greens and you’re all set to serve!
