Veg Cheese Frankie

Ingredients:

For Aloo Patty:
1 Tsp Oil + 1 Tbsp Butter
1 Tsp Cumin
1 Tbsp Ginger Garlic Paste
2-3 Green Chillies, chopped
Asafoetida, a pinch

Powdered spices:
1/2 Tsp Turmeric Powder
1 Tbsp Red Chilli Powder
1 Tbsp Coriander Powder
1 Tsp Garam Masala
1 Tbsp Tomato Ketchup
1 Tsp Red Chilli Sauce
Water as required

3 cups Potatoes, boiled and mashed
Salt to taste
1 Tsp Lemon Juice
1 Tbsp Coriander Leaves, chopped
3 Tbsp Refined Flour + 6 Tbsp Water Slurry

For Frankie Masala:
3 Tbsp Kashmiri Red Chilli Powder
1 Tsp Turmeric Powder
2 Tbsp Coriander Powder
1 Tbsp Black Salt
1 Tbsp Anardana Powder
3 Tbsp Mango Powder
1 Tbsp Cumin Powder
2 Tsp Garam Masala
1/2 Tsp Black Pepper
1/2 Tsp Salt

For Chutney (blended):
Handful of fresh coriander leaves and mint leaves
3-4 Green Chillies
1/2 inch Ginger
3 Tbsp Tamarind Pulp
1/2 Tsp Black Salt
4 Tbsp Water

Method:

Set a pan on medium heat, and add all the ingredients for the patty

Add the powdered spices and mix well. Then add a splash of water and cook it for 1-2 minutes

Add the boiled potatoes and salt to taste, mix well and cook for 2-3 minutes

Add some coriander leaves and squeeze the lemon. Mix well and cook for a minute. Transfer it to a bowl and cool down to room temperature.

Shape the potato mixture in well oiled hands into a long patty

Set the tawa on medium heat and apply a layer of refined flour slurry over the patty and cook until golden brown

Apply the same amount of slurry on the other side as well and cook that too until golden brown

For the chilli vinegar, soak chopped green chillies in 2 Tbsp vinegar for 10-15 minutes

Make the frankie masala by mixing all the spices in a mixing jar

Heat a tawa on medium, add a blob of butter and heat the roti. Take it out onto a plate and add the patty over the roti

Sprinkle some frankie masala all over the roti, top it with some chopped onions, chutney, chilli vinegar, grated cheese, and roll it
