Chicken Stroganoff over Pasta


1 cup Penne Pasta, fully cooked
500 gms Boneless Chicken Breasts, cut into small, thin strips
200 gms Mushrooms, sliced
3 Tbsp Olive Oil
50 gms Butter
200 ml Cream
1 Onion, chopped
2 Garlic Cloves
Salt as required
1 Tsp Black Peppercorns, ground
1 Tsp Paprika
1 cup Chicken Stock
1 Tbsp Mustard Paste
Parsley/Coriander to garnish


Drizzle some oil in a pan and start frying the chicken on medium heat

Add salt, pepper and paprika powder, and cook for 6-7 minutes until golden brown. Once done, take it out onto a plate

Heat the butter in the same pan and add in the onions. Saute until they get soft

Add in the mushrooms and saute well. Then add the garlic and again saute till the mushrooms are a bit brown. Add a pinch of salt and crushed pepper and saute for a few minutes

Add the chicken stock along with the mustard paste and mix well

Lower the heat, add the fresh cream and mix it all together

Let it come to a boil. Then add in the fried chicken and mix it well

As it gradually starts to thicken, sprinkle parsley or coriander over, mix and then turn off the heat

Place the Pasta in the serving dish and lay the Stroganoff over

Garnish with parsley or coriander and you’re all set to serve!
