Mutton Beliram
Ingredients:
1 Kg Mutton
3 Tbsp Ghee
1 Tbsp Coriander Seeds, crushed
For Marinade:
3 Tbsp Ginger Garlic Paste
10 Peppercorns, crushed
5 Green Chillies, finely chopped
1 inch Cinnamon Stick
8 Green Cardamoms
1 Tbsp Red Chilli Powder
1/2 Tsp Turmeric Powder
1 Tsp Coriander Powder
1 Tsp Cumin Powder
1 Tsp Dried Fenugreek
2 large Onions, sliced
3 cups Beaten Curd
Salt to taste
Method:
Marinate the mutton with all the ingredients for the marinade and let it rest in the fridge for 2 hours
Heat the Ghee in a vessel and then add the coriander seeds
Now add in the mutton and let it fry for 4-5 minutes on high heat
Set the heat to low-medium, cover and let the mutton cook for 1-1.5 hours depending on how tender you prefer it
Keep checking on the mutton at regular intervals to make sure the water doesn’t dry up well before the meat becomes tender. If it does, add half a cup of hot water to the mutton, mix well and again cover and let it continue cooking
Once cooked to your preference, turn off the heat and you’re all set to serve with hot parathas!
