Chilli Paneer

Ingredients:

200 gms Paneer, cut into cubes and coated in 1 Tbsp Corn Flour
Oil to deep fry

For Batter:
2 Tbsps All Purpose Flour
1 Tbsp Corn Flour
Salt, a pinch
4-5 Tbsps Water

For Chilli Paneer:
2 Tbsps Oil
1 Tbsp Garlic, finely chopped
2 dry Red Chillies, roughly chopped
1 medium Onion, cut in quarters and bulbs separated
1 small Capsicum, cut in squares
1 Tbsp Soy Sauce
2 Fresh Red and Green Chillies, sliced
1 Tbsp Green Chilli Sauce
1 Tbsp Sweet & Sour Ketchup
1 Tsp Sugar
1 Tbsp Corn Flour mixed with 2 Tbsp water and made into into slurry
1 full Spring Onion, sliced

Method:

Make the batter and pour it over the coated panner cubes and mix well to coat them evenly

Deep fry the batter coated paneer cubes on medium heat till light golden and then keep them aside on a plate

Heat oil in a pan on medium to high, and add garlic, red chilli and saute for a minute

Add the onions and capsicum, and saute for a couple of minutes

Add the soy sauce and toss well to coat well. Then add the fresh chillies and saute for a few seconds

Add the green chilli and Ketchup, and mix well

Add 3-4 Tbsp water along with sugar and mix till it melts

Then add the corn flour slurry while stirring continuously and cook till the sauce thickens

Add the fried paneer cubes and spring onions and toss well for about 20 seconds before turning off the heat

Garnish with spring onion greens and toasted sesame seeds and serve straight off the pan!
