Shakshouka

Ingredients:

1 large Onion, sliced
1 medium Capsciums, diced
1 Yellow Bell Pepper, diced
3 medium Tomatoes, diced
2 Garlic cloves, chopped
2 Green Chillies, chopped
1 Tbsp Oil
1 Tbsp Red Chilli Powder
1/2 Tsp Turmeric Powder
1/4 Tsp Sugar
1 cup Tomato Puree
1/2 cup grated Cheese
3-4 Eggs
1/2 Tsp Olive Oil
Nutmeg gratings (optional)
A pinch of Cinnamon Powder (optional)
Water

Method:

In a pan on medium heat, add oil and the garlic, and saute well for a minute

Then add onion and continue sauteing until the onions become translucent

Add the capscium and bell pepper and toss everything well for a minute or two. Grate in a pinch of nutmeg and cinnamon powder at this point

Add the red chilli and turmeric powder along with the tomato and green chilli, and mix it all well

Add salt to taste, and the sugar, and mix it well

Pour in the tomato puree and mix well. Add a bit of water and cook for about five minutes

Using your spatula, make an egg-sized gap in the mixture

Fill the hole with grated cheese and then crack an egg over the cheese. Repeat for as many eggs as required

Lower the heat, cover the pan and cook for about 5 minutes or until how you prefer your eggs done

Turn off the heat and drizzle some olive oil over

Garnish with coriander leaves and spring onion greens, and you’re all set to serve!
