Street-Style Mixed Hakka Noodles
Ingredients:
200 gms Prawns, cleaned and deveined
300 gms Chicken Breasts, cut into 1 inch pieces
1 Egg
Pinch of pepper powder
1 Tsp Vinegar
300 gms Hakka Noodles
1/2 cup shredded Cabbage
1/2 cup Carrot, julienned
100 gms Mushrooms, sliced
1/2 cup Beans, cut into 1/2 inch pieces
1 medium Capsicum, cut into strips
1 Spring Onion Bulb, sliced
1 Spring Onion’s Greens, cut into 1 inch pieces
2 medium Onions, sliced
1-2 Tbsp Soy Sauce
1-2 Tbsp Green Chilli Sauce
1 Tbsp Oyster Sauce
3-4 Tbsp Oil
Salt as needed
Method:
Par boil the noodles to 90% with 1 Tbsp of Oil and a pinch of salt. Then drain the water and run the noodles under cold water to stop the cooking. Drizzle some oil over them just to prevent then from sticking
Marinate the chicken with the egg and a pinch of salt and pepper, and vinegar
Heat oil in a pan on medium and start frying the chicken till it’s done. It should take 4-5 minutes
In a pan, heat 3-4 Tbsp of water with a pinch of salt on medium and add the prawns. Cook them on both sides till they curl up and turn pink. It should take about 3-4 minutes
Heat the oil in a large wok on medium to high and start frying the onions and spring onion bulbs
Saute them for about 2 minutes and then add the carrots, beans, capscium and cabbage, and saute everything well
Toss in the mushrooms and mix everything well. Let them cook for a couple of minutes and then add a pinch of salt of needed
Add the chicken and the prawns and then add the green chilli sauce and mix
Now add in the noodles and use a kitchen forceps or two spoons to mix them with the veggies
Add the soy and oyster sauce and mix everything well till the noodles are well coated in the sauce and mixed with the veggies, chicken and prawns
Turn off the heat and garnish with spring onion greens!
