Potato Pancakes
Ingredients:
3 large Potatoes, peeled
1 large Onion, finely chopped
2-3 Eggs
3 Tbsp All purpose Flour
2 Green Chillies, chopped
1/3 Tsp Red Chilli Powder
Salt to taste
1/3 Tsp Black Pepper Powder
Oil for shallow frying
Method:
Grate the potatoes in a bowl. Soak them in water for 5 minutes, drain and then rinse with another round of running water
Drain and squeeze out the water from the potatoes completely
Crack the eggs in a bowl, and add the green chilli, red chilli powder and black pepper powder along with the onions and grated potato. Mix it all well
Heat 2-3 Tbsp oil in a frying pan on low-medium
Once the oil is heated, add salt to the mixture
💡Tip: If you add salt earlier, the potatoes will start sweating and it will ruin the consistency of the mixture
Take small lumps of the mixture in the pan and flatten them with a spatula or spoon
💡Tip: Use steel moulds to get the perfect round shape
Cook on one side for a minute on low-medium and then flip them. Cook for 2-3 minutes on the other side
Flip again and cook till they turn golden brown on both sides, then take them out on a kitchen towel to drain excess oil
Serve hot with tomato ketchup!
