Sri Lankan Black Pork Curry

Ingredients:

600gms Pork Shoulder with a bit of fat, cut into medium pieces

Marinade:
4 Tsp Black Peppercorns
6 Cardamoms – seeds removed and crushed
1 Tsp Garam Masala
1/2 Tsp Salt
1/4 Tsp Cinnamon Powder
3 Tsp Tamarind Paste

For Curry:
2-3 Spicy Red Chillies or Jalapenos, sliced
3 Garlic Cloves, minced
1/2 medium Onion, finely chopped
1 Tbsp Lemon Juice
2-3 Bay Leaves
1 sprig of Curry Leaves
1 Tbsp Sugar
Salt to taste
2 Tbsp Oil

Method:

Crush the cardamom seeds into a powder and mix with the black pepper, garam masala, salt, and cinnamon, then crush them in a mortar and pestle

Mix 2 Tbsp of this spice mix, tamarind paste, and 1 Tbsp Oil to the pork and marinate for 1-2 hours

Heat 2 Tbsps Oil in a pan on medium heat. When the oil is hot, add the bay leaves and onions, and saute till the onions become translucent

Add the garlic and chillies and saute for another 30 seconds

Add the marinated pork and sugar and mix well. Add 1/2 cup of water and bring to a boil

Lower the heat to low-medium and simmer for 1-1.5 hours. Check on the curry intermittently, and add extra hot water if it gets dry

Add more salt and some lemon juice as needed along with curry leaves

Once the pork is tender, turn off the heat and let it rest for 20 minutes before serving

Serve hot with steamed rice!
