when you really want tacos but don’t have any tortillas on hand ?? 5 minute 1 ingredient cheese taco shells! these made for the best breakfast tacos ever. such a life hack, and can be made vegan!!

WHAT YOU NEED:

•square or circle slices of your favorite cheddar or colby jack cheese (vegan or regular)

•fillings of choice. i did: cauliflower rice seasoned with taco seasoning, arugula, scrambled egg, black bean + corn salsa, and a dollop of plain greek yogurt.

TO MAKE THE SHELLS:
preheat oven to 350 and line a baking sheet with parchment paper. lay your cheese slices on the parchment paper, leaving an inch or 2 of space between each slice. bake for 6-7 minutes, until edges are mostly browned.

remove from oven and let cool for a minute, before using a spatula to carefully lift the cheese slices from the parchment paper and hang them over the handle of a wooden spoon propped up on 2 cups. allow them to mostly cool, then add your fillings and enjoy!
