Veg Khao Suey

Ingredients:

For the Soup:
1 medium Onion
3-4 Garlic Cloves
1 inch Ginger
2 Green Chillies
1 Tbsp Coriander Stems
1 Tbsp Oil

Powdered Spices:
1 Tsp Turmeric Powder
1 Tsp Red Chilli Powder
1/2 Tsp Coriander Powder
1/2 Tsp Cumin Powder

Vegetables:
1/4 cup French Beans, chopped
1/4 cup Carrots, chopped
1/4 cup Baby Corn, sliced
4-5 Baby Mushrooms

Other Ingredients:
1 cube Vegetable Stock mixed in 350ml hot water
1 Tbsp Sugar
Salt to taste
1 Tbsp Gram Flour
400ml Coconut Milk

For Garnish:
Spring Onion Greens, chopped
7-8 cloves of Garlic, chopped and fried till brown
2 medium Onions, fried into birista
2 Tbsp Groundnuts, roughly crushed
2 Tbsp Coriander Leaves, chopped
2-3 Tbsp Fried Noodles
1 medium Onion, sliced finely
1 Tbsp Chilli Oil

Method:
Add the onions, garlic, ginger, green chillies and coriander stems with 1 Tsp water and grind into a fine paste

Set a wok on medium-high heat and add oil. Then add the onion paste, stir and cook for 2-3 minutes

Lower the heat and add the powdered spices along with a little water and cook the spices until the oil releases

Then add the veggies and stir well for a couple of minutes

Add the vegetable stock, sugar and salt to taste. Stir and bring to a boil and then cook for 5-6 minutes on medium heat. Then lower the heat

In the meantime, in a separate bowl add the gram flour and mix in a few tablespoons of coconut milk. Mix it well to make slurry and add thi to the coconut milk and stir well

Add the coconut milk to the wok and stir well. Increase the heat to medium and let it simmer for 5-6 minutes. Keep stirring at regular intervals

Adjust the seasoning if needed and sprinkle some lemon juice

To serve, place boiled noodles in a bowl and pour the hot soup over. Top it with some groundnuts, onion slices, fried noodles, birista, fried garlic, coriander leaves and spring onion greens

Drizzle some chilli oil and lemon juice and serve hot!
