Prawn and Sausage Jambalaya

Ingredients:

1/2 Kg Prawns peeled and deveined
2 cups Chicken Broth
2 Tbsp Butter
250 gms Chicken Sausage, sliced
1 Onion, diced
1 Bell Pepper, diced
2 cloves Garlic, chopped
1 cup Tomatoes, diced
1 Tbsp Tomato Puree
1 Tsp Worcestershire Sauce
2 Bay Leaves
1 cup Basmati Rice
Salt, to taste
Pepper
4 Green Onions, sliced

Method:

Bring the chicken broth to a boil, reduce the heat and simmer until required

Meanwhile, heat the oil in a large pan over medium-high heat, add the sausage and cook until browned on both sides

Add the onion, bell pepper and cook until tender, about 5 minutes

Add the garlic and cook until fragrant, for about a minute

Add the broth, diced tomatoes, tomato puree, Worcestershire sauce, bay leaves and rice to the sausage and vegetables, and bring to a boil

Reduce the heat and simmer with the lid closed until the rice is tender and the sauce has reduced to the desired thickness. It takes about 20-40 minutes

Add the prawns over the rice and cook until done for about 3-5 minutes

Season with salt and pepper to taste and served topped with the green onions!
