my favorite summertime open-faced veggie sandwich ? stacked with so much flavor, lots of veggies, and plant-based protein. another quick and easy lunch that i will never get sick of!

to make:
-toast your bread of choice, then layer with:
•vegan cheese spread or cream cheese (i like to use an herb or scallion flavored one)
•sliced avocado
•mixed greens or spinach
•sliced baked tofu
•sliced tomatoes
•salt + pepper
•splash of balsamic
