banana egg pancakes ? forever a staple for a sweet but healthy breakfast!

for 1 serving:
1 ripe banana, mashed
2 eggs
2 tbsp oat flour
1/4 tsp baking powder
pinch of salt
dash of cinnamon

whisk everything together into a batter, then cook for a few minutes per side in some butter or coconut oil on a griddle or pan over medium heat. top with a dollop of greek yogurt, fresh fruit, and maple syrup!
