the copycat sweetgreen spicy cashew dressing can do no wrong ? still one of the most popular recipes on the blog- i will put this dressing on anyyything. salads, grain bowls, drizzled over roasted salmon and veggies, or a roasted veggie pasta like this (kind of like a warm pasta salad)! it’s the best thing ever to meal prep and super easy to make. for the dressing recipe!

for your veggies:
slice up 3-4 veggies and some red onion. toss in avocado oil, salt, pepper, garlic powder, and smoked paprika. lay flat on a parchment-lined sheet pan. roast at 425 until cooked to your preference, tossing once after 15 minutes or so!
