Say hi to your new favorite simple dinner! This easy and delish Taco Casserole is made with a handful of super simple ingredients along with bushsbeans Sidekicks- my new fave addition to meals for extra flavor, plant protein, and fiber! This casserole is packed with nutrients, has the best flavor, and it’s SO easy to throw together for dinner after a busy day- I’m obsessed! Recipe below
Taco Casserole (serves 6)
1 tbsp olive oil
1 small onion (or 1/2 of a large onion), finely diced
1 lb ground beef, turkey, or chicken
1 tbsp tomato paste
1 + 1/2 cups frozen riced cauliflower
1 packet of taco seasoning
1 (15 oz) can of diced tomatoes with jalapeños and cilantro (or you can sub with 15 oz of salsa)
1 can of bushsbeans Southwest Zest Sidekick Beans
1 cup shredded cheese
Toppings of choice (lettuce, avocado, salsa, sour cream, etc.)
Tortilla chips, for serving
1. Preheat oven to 375°F.
2.Heat a large pan over medium heat. Add olive oil and onion and cook for 4-5 minutes, stirring occasionally. Add ground beef, breaking up with a spatula. Cook until no longer pink.
3. Stir in your tomato paste, riced cauliflower, taco seasoning, and diced tomatoes (or salsa). Cook for 2-3 minutes, then stir in your bushsbeans Sidekicks and turn off heat.
4. If you pan is oven safe, you can leave the filling in the pan. Otherwise, transfer to an 8″ or 9″ oven-safe baking dish. Sprinkle your cheese over the top of the filling, then bake for 10 minutes. Allow to sit for 5-10 minutes before serving with tortilla chips and toppings of choice.
