Swiss Chard Lentil Soup (3adas b’hamoud)✨

A comforting bowl of soup is not only nutritious but also nourishing especially after a long day of fasting. Made with lentils, swiss chard, potatoes and lots of lemons, it’s the perfect Ramadan soup that will help replenish the fluids lost in your body during the day.
Recipe:
•2 bunches swiss chard (washed & chopped)
•3/4 cup lentils
•1 large onion
•2 garlic cloves minced
•4 potatoes diced
•2 lemons juiced
•1 1/2 tsp salt
•1 tsp 7 spice
•1/2 tsp cumin
•1/2 tsp black pepper
•3 tbsp olive oil
•10 cups water
Method:
✨Wash lentils well, drain & add to a large pot. Add water and cook lentils on med/high heat until they begin to soften (about 15 minutes).
✨In a separate frying pan, heat 3 tbsp of olive oil. Add onions and garlic and sauté until translucent.
✨After lentils have cooked, add chopped swiss chard, potatoes & spices’. Reduce heat to med/low, cover the pot and cook for another 10 minutes.
✨Add onions & lemon juice, stir and cook for an additional 5 minutes on low. Plate and squirt more lemon if you like it extra-lemony. Bon appetit!
