Baked Kafta, Potatoes & Rice✨

A comforting Lebanese casserole of kafta (spiced ground meat) with potatoes & tomatoes, baked with a seasoned tomato sauce and served with vermicelli rice. You can fry the potatoes for this dish but I opted to bake them for a healthier version. Quick and simple to make, my family absolutely loves this meal.

Recipe:
•1 1/2 lbs lean ground beef
•1 bunch parsley, chopped
•1 onion, finely diced or grated
•1 1/2 tsp salt
•2 tsp 7 spice
•1/2 tsp black pepper
•1/2 tsp cinnamon
•3 tomatoes, cut in round slices
•3 potatoes, peeled and sliced (I use Russet potatoes they hold their shape well when placed in sauce).

For the sauce:
•3 tbsp tomato paste
•4 cups water
•1 tsp salt
•1/2 tsp 7 spice
•1/2 tsp dried basil
•1/4 tsp black pepper

Method:
✨In a large bowl combine beef, onion, parsley & spices and mix until all the ingredients are well combined.
✨Form the mixture into patties and place in a oven safe baking dish, alternating with potatoes and tomatoes (you can also layer them on top of each other).
✨In a separate bowl, add all the ingredients for the sauce and whisk together very well. Pour on top of kafta and cover with foil.
✨Bake at 400 for 30 minutes then remove foil and bake for another 10 minutes. Serve with vermicelli rice. Bon appetit!
