Lentil Soup✨

This traditional Lebanese lentil soup recipe is not only super easy to make, it’s nutritious, filling and full of flavour. There’s many different ways to prepare this soup (some add potatoes instead of rice, some add celery) but this recipe is my family’s favourite. It’s one of the most comforting soups to have during the month of Ramadan.😍
Recipe:
•1 1/4 cup red lentils
•1 medium onion, diced
•1 large carrot, shredded
•1/3 cup rice
•1 tsp ground cumin
•1/4 tsp black pepper
•1 tsp salt + more to taste
•2 tbsp olive oil
•2 tbsp lemon juice
•8 cups water
•fresh parsley to garnish (optional)
Method:
✨Soak lentils for 10 minutes, wash well until the water becomes clear (making sure there’s no foam left after you wash it).
✨In a large pot, add olive oil, onions & carrots and sauté for a few minutes. Add lentils, rice, spices & water and bring to a boil. Lower heat and simmer for 25-30 minutes.
✨Remove from heat and use an immersion blender to blend the soup.
✨Add lemon juice, stir & Enjoy!
Note: Soup will thicken after it cools down. To reheat it simply add a bit of water to return soup to your desired consistency.
