Banana Chocolate Chip Muffins✨
✨
In my house, bananas are either eaten quickly or they sit on the table forgotten..there’s no in-between. We decided to keep the kids busy and made some banana chocolate chip muffins. Crispy bottom and super fluffy on the inside, you’ll be tempted to sneak seconds when no one is looking🙊
Recipe:
•1 1/2 cup all purpose flour
•2 ripe bananas
•1 large egg
•1/2 cup unsalted butter, melted
•1/2 cup sugar
•1/4 cup milk
•1 cup milk chocolate chips
•1 tsp baking powder
•1 tsp baking soda
•1 tsp vanilla extract
•1/4 tsp cinnamon
•pinch of salt
🍌Note: the riper the banana the sweeter it is – if your bananas are super ripe you can always use less sugar.
Method:
✨In a large bowl mash bananas. Add melted butter, sugar, egg, vanilla extract & milk and mix well.
✨Stir in dry ingredients, ed by chocolate chips and mix until combined (do not over mix).
✨Line muffin tray with baking cups. Spoon batter into prepared muffin cups, filling each cup 3/4 full.
✨Bake at 350 until a toothpick inserted in the centre of the muffin comes out clean (about 18-20 minutes).
