Stuffed Peppers ??

One of my favourite healthy dishes to make. Tender bell peppers stuffed with flavourful ground beef, cauliflower rice (for a low carb version but I usually use regular rice), tomato sauce and topped with cheese. Perfect for a quick weeknight meal and a great way to use up the peppers in the fridge ?

Recipe:
•6 bell peppers (I use pureflavor peppers from Costco)
•1 lb ground beef
•1 cup cauliflower rice (or 1 cup cooked rice)
•1/2 cup tomato sauce
•1/2 cup water
•1 onion, diced
•2 cloves garlic, minced
•3 tbsp olive oil + more for drizzling
•1 tsp paprika
•1 tsp cumin
•1 tsp dried oregano
•1 tsp salt
•1/2 tsp black pepper
•1/2 tsp Italian seasoning
•1 cup shredded cheese

Method:
Preheat oven to 375°F
▫️Cut the top off and remove the insides of your bell peppers and place them in a baking dish. Drizzle with olive oil, sprinkle with salt & pepper and bake for 15 minutes (another option is to boil the peppers for 5 minutes).
▫️For the mixture: Heat olive oil, add onions + garlic and cook until translucent. Add the ground beef & spices (except oregano) and sauté until meat is browned. Add cauliflower rice, mix well with ground beef and cook for 2 minutes. Add tomato sauce & oregano stirring to incorporate all together.
▫️Remove the bell peppers from the oven and divide the mixture between all 6 peppers. Add the top over each pepper. Add 1/2 cup water to the baking dish, cover with foil and bake for 20 minutes.
▫️Uncover, add cheese and bake for an additional 10-15 minutes until cheese has melted. Broil to brown the cheese. Enjoy?
