Shakshuka 🍳

Egg shakshuka from last weekend! Poached eggs in a simmering mixture of onions, tomatoes, bell peppers and garlic. So healthy, filling and packed with flavour. 🍳

•1 large onion, diced
•6 large eggs
•4 medium tomatoes, diced
•3 garlic gloves, minced
•1 red pepper + 1/2 yellow pepper, diced
•1/2 cup tomato sauce
•1 tsp paprika
•1 tsp salt
•1/2 tsp cumin
•1/2 tsp ground coriander
•1/4 tsp black pepper
•3 tbsp olive oil
•sprinkle of crushed pepper flakes (optional)
•chopped parsley to garnish

▫️Heat olive oil in a large skillet. Add onions and cook until translucent. Add garlic, peppers & spices. Mix well and cook until vegetables have softened (about 5 minutes).
▫️Add the diced tomatoes and tomato sauce. Cover and let simmer on medium heat for 10-15 minutes.
▫️Once the mixture has thickened, use a wooden spoon to make six wells. Gently crack an egg into each one. Reduce the heat, cover and cook on low until the egg whites are set.
▫️Add crushed red pepper flakes and parsley to garnish. Enjoy with pita bread!
