KETO Blueberry Muffins🫐
These super moist almond flour blueberry muffins from scratch are super easy to make. It’s the perfect low carb recipe that I absolutely loved while on the keto diet. They are delicious and perfect for anyone watching their carb intake.
•2 1/2 cups almond flour
•3/4 cup fresh blueberries
•1/2 cup granulated sweetener
•1/3 cup unsweetened almond milk (room temperature)
•1/3 cup coconut oil or butter (measured solid then melted)
•1 1/2 tsp baking powder
•1 tsp vanilla extract
•pinch of salt
Preheat oven to 350°F
▫️Line a muffin pan with 12 parchment paper muffin liners.
▫️In a large bowl, add almond flour, sweetener, baking powder & salt.
▫️Mix in melted coconut oil, almond milk, eggs and vanilla extract. Fold in the blueberries.
▫️Divide the batter evenly among the muffin cups. Bake for 20-25 minutes until they turn a golden colour and an inserted toothpick comes out clean!
