Foul M’damas (Fava Beans)✨
My kids asked for foul m’damas for breakfast (a very popular fava beans dish enjoyed throughout the Middle East). The hearty beans and fresh vegetables are a warm and tasty way to start the day.
What I used:
•2 cans fava beans (Cedar brand)
•1 cup water
•3/4 cup chickpeas
•2 small tomatoes, diced
•3 garlic cloves, crushed
•1/2 cup chopped parsley
•1/4 cup olive oil
•1 lemon, squeezed
•salt to taste
Method:
▫️Drain and rinse the fava beans & chickpeas. Place them in a pot, add water and bring to a boil. Lower heat and let them simmer for 10-15 minutes until beans have softened (lightly crush the beans with a fork while they are simmering).
▫️Remove from heat. Add lemon juice, garlic, salt, olive oil, diced tomatoes & parsley and mix all together.
▫️Serve warm. Garnish with some extra parsley, tomatoes and a good drizzle of olive oil to complete this delicious breakfast. Enjoy with pita bread and sliced veggies!
