Ingredients For 4 Ingredients :

▪️2 tbsp oil⁣
▪️2 garlic cloves (crushed)⁣
▪️1 red onion (roughly diced)⁣
▪️1 tsp paprika⁣
▪️1/2 tsp ground coriander⁣
▪️1/2 tsp cayenne pepper⁣
▪️Pinch of chilli flakes⁣
▪️2 cans chickpeas (400g x2)⁣
▪️4 Tbsp peanut butter ⁣(crunchy or smooth)
▪️1 tsp veg stock (or 1/2 cube)⁣
▪️2 tbsp tomato puree⁣
▪️Juice Lime⁣
▪️1 can coconut milk⁣
▪️Handful spinach (optional)⁣

Method:⁣

1️⃣Heat a large pot on a medium heat with oil, crushed garlic onion then fry for a couple minutes⁣
2️⃣ Now add the spices + drained chickpeas + peanut butter + veg stock powder + tomato puree + lime juice + coconut milk and cook on a high heat for roughly 6-7 minutes until it thickens (making sure to stir)⁣
3️⃣Finally take off the heat and add in the spinach (optional) and stir until it wilts⁣

FAQ’s:

➡️ Peanut allergy? Swap for almond butter that also works really well.
➡️ Nut allergy? You can make this just as a chickpea curry, just leave out the peanut butter and simmer for a little longer to thicken
➡️ Is it spicy? No, I make all my curries mild for everyone to enjoy. If you like spice I would double up the spices or spice to taste!
➡️ How to store it? Keep in a sealed container in the fridge for a couple days or freeze down for another day
