Cheesy Tomato Pasta 😋

2 cups pasta of choice 1 tsp coconut oil 2 cloves garlic, minced 1 medium onion, chopped 2 tbsp tomato paste 3/4 cup plant based milk of your choice 2 tbsp nutritional yeast Salt and pepper to taste 1/4 cup vegan cheese, grated Cook the pasta according to packaging instructions. Meanwhile, heat the coconut oil a pan and add the garlic, onion and tomato paste. Cook for 6-7 minutes, stirring frequently. Then add the plant based milk and nutritional yeast. Stir to combine. When the pasta is done, transfer it to the pan using a slotted spoon together with 1/4 cup pasta water. Season to taste with salt and pepper and add the vegan cheese. Serve when the cheese melts.
