You’ll need to try these chickpeas out if you’re looking for a new way to cook yours! Here’s a bowl filled with Smoky Chickpeas and Orange Thyme Orzo by leeksnbeets

​This bowl is filled with a base of mustard greens, beet greens and shredded brussels sprouts topped with orange thyme orzo, crispy smoky chickpeas, avocado topped with everything bagel seasoning, red onion, mint and rainbow microgreens. 💚

❇️ FOR THE ORZO ⤵️
🔹1 cup orzo (dry), cooked according to package instructions
🔹½ cup orange juice (approx 2 medium oranges, squeezed)
🔹2 tbsp olive oil
🔹1 tbsp orange zest
🔹1 tbsp agave or maple syrup
🔹1 small garlic clove, minced
🔹1 tsp fresh thyme leaves, loosely packed
🔹½ tsp sea salt
👉🏻 Combine all the ingredients together aside from the orzo and whisk until well combined. Add 3-4 tbsp to the cooked orzo and serve the remainder on the side. Enjoy!

❇️ FOR THE CHICKPEAS 👉🏻 In a pan heat up 1 tbsp avocado oil. Once hot add 1 can (or 1½ cups) of chickpeas (drained) and cook 5 mins, stirring every now and again to crisp evenly then add 1½ tsp smoked paprika, 1 tsp each garlic powder, onion powder and sea salt and ½ tsp each liquid smoke and chipotle powder (optional). Cook 1 more min, stirring to evenly distribute the seasoning then take off heat and enjoy!
