This Farro & Strawberry Salad by happyskinkitchen is perfect if you want something fruity, filling and super delicious ? It’s paired with a mint dressing which goes so well with the sweetness of the strawberries ??

The full recipe is below ??

Serve 2


400g ( roughly 2 cups) of cooked farro/spelt
220 of strawberries – cut into quarters
1/2 cucumber – cut into half moon slices
1/2 avocado – cut into chunks
a handful of rocket or mixed greens
50g of feta style vegan cheese cut into cubes
1/2 red onion – cut into thin slices

For the mint dressing:

a bunch of mint leaves (about 20g)
1 garlic clove
1 tsp of dijon mustard
the juice of 1 lemon
3 tbsp of extra virgin olive oil
1 tsp of maple syrup
a generous pinch of salt & pepper

Make the dressing: add all the ingredients into a blender ( I have used a hand blender) and blend until fairly smooth. Mix all the salad ingredients into a bowl. Drizzle the dressing and mix again. Enjoy!
