The best roast vegetables with a garlic tahini sauce

Recipe:
For the vegetables
1 large zucchini, chopped
3 cups mushrooms, whole
1 large red onion
1 large white onion
3 cups broccoli florets
1/4 cup olive oil
3 tbsp maple syrup
1 tbsp dried thyme
1 tsp garlic powder
1 tsp salt
For the sauce
1/2 cup tahini
3 tbsp apple cider vinegar
2 tbsp soy sauce
1/2 cup plant milk
2 cloves garlic
Preheat the oven to 350 degrees and line a baking tray with parchment paper. Add the zucchini, mushrooms, onion and broccoli to a large mixing bowl and stir together with the olive oil, maple syrup, dried thyme, garlic powder and salt. Transfer to the baking tray and bake for 25-30 minutes, until crispy. Meanwhile, make the sauce by simply stirring together all the ingredients. Serve the sauce with the veggies and enjoy!
