Chickpea Ranch Salad Sandwich

Recipe:
(serves 3-Four sandwiches)
1 can chickpeas, rinsed and drained
half of pink bell pepper, finely diced
1/Four cup pink onion, finely diced
Tahini Ranch (recipe under)
Bread of your selection (I used silverhillsbakery)
Tahini Ranch
Three tbsp tahini (I used soomfoods)
Three tbsp plain unsweetened plant primarily based yogurt
Juice of half a lemon
2 tsp brown mustard
half of tbsp dietary yeast
half of tsp garlic powder
1 tsp onion powder
2 tsp dry parsley
2-Three sprigs recent dill, minced
Salt and pepper to style
3-Four tbsp water
In a bowl add your chickpeas and with a fork or potato masher mash chickpeas to your required consistency (I like a 50-50 mixture of crushed to much less crushed chickpeas). Add in your ranch, bell pepper and onion and blend nicely to mix. Scoop your chickpea combination in between two slices of bread and be happy to additional costume it up as desired. This additionally works rather well in a wrap too.
