Lemon Pine Nut Crema

1/2c soaked pine nuts
Juice of 1 lemon
2small garlic cloves
Pinch of chilli flakes
1tsp Dijon mustard
Cracked pepper
~soak pine nuts for minimal 1 hour. Add all elements to blender and mix until clean.

PASTA (serves four huge parts)
1bag of brief noodles (I used mezzi rigatoni)
1can cannelini beans (drained and rinsed totally)
1clove garlic
1/2red onion
8c combined mushroom (I used cremini, black and white oyster)
1c frozen peas
1 1/2c chopped zucchini
1c chopped asparagus
2 tbsp olive oil
Pinch chilli flakes
Vegan Parmesan
Boil water for pasta. Preheat massive pan, add olive oil. Add in onion and sweat for a few minutes, add chilli flakes and garlic and prepare dinner until aromatic (30 sec 1 min). To the pan add asparagus and sauté for a few minutes, add in mushrooms. Let mushrooms settle and prepare dinner for a few minutes after which begin tossing the whole lot collectively. *if combination appears to be like dry, add a splash or two of pasta water to get issues transferring.* lastly add in zucchini, peas and beans. Season with salt and pepper. I put a lid on the combination for a few minutes to permit the whole lot to essentially meld collectively. As soon as pasta is cooked, reserve 1/2c of pasta water earlier than draining (I all the time rinse my gf pasta after cooking to remove any starchy residue) and toss pasta into pan. Add in crema and blend to mix. Add in reserved pasta water if desired for a creamier smoother texture. Season with salt and pepper, vegan parm, sprouts and at last a drizzle of excellent olive oil.
