Serve 4-6
Four fieldroast vegan sausages
1 onion, diced
250g mushrooms, sliced
1-2 tbsp further virgin olive oil
Four cloves garlic, minced
5 small carrots, chopped
1 small zucchini, grated
1 beet, peeled & grated
handful of chopped beet greens
250g geovita.canada barley, spelt & lentil mix
500 ml veggie inventory
250 ml tomato sauce
1 giant bay leaf
half of tsp salt
1/Four tsp cracked black pepper
half of tsp smoked paprika
1 tsp rosemary, recent
1 tsp thyme, recent
1/Four tsp purple chili flakes
Warmth oil in a big pot and add onions, cook dinner for a couple of minutes after which add mushrooms. Sprinkle with salt and cook dinner till golden.
Add garlic, carrots, chili flakes, smoked paprika & rosemary. Prepare dinner for a couple of minutes.
Add grated beets, zucchini, tomato sauce and bay leaf. Stir nicely, cowl and simmer on low for about 10 minutes.
Add barley mix and veggie inventory. Season with salt, pepper & thyme. Prepare dinner till the grains have absorbed many of the liquid and also you’re left with a wealthy sauce and tender veggies/grains.
Stir in beet greens.
In a frying pan with a little bit olive olive, fry sausages till each side are golden. Minimize sausages in half (or slice) and add to your stew pot. Style and alter seasoning as needed.
