Zucchini fritters 💚 These danish ‘frikadeller’ are filled with zucchini + a simple vegan recipe to serve together with salads, greens, baked potatoes or with pitas.

* 2 tablespoon of flax seeds
* 7 tablespoon of water
* 600g. zucchini
* half of onion
* 2 cloves of garlic
* 7 tablespoons of oats
* 7 tablespoons of breadcrumbs
* 1 teaspoon cumin
* Salt and pepper
Combine flax seeds and water and put aside. Wash and shred the zucchini and drain all water. Combine with chopped garlic, onions, oats, breadcrumbs, cumin, salt and pepper. Pour within the flax seeds and blend effectively. Let it relaxation for 10-15 minutes within the fridge. Type the dough into small fritters form together with your arms. Cook dinner on a pan in rapeseed oil 4-5 minutes on all sides till crispy and golden.
