Comforting chickpea pasta that’s really easy to make 🥰😋

Recipe:

Makes 2 servings

Components:
1 tbsp olive oil
1 medium onion, diced
1 medium carrot, chopped
1 cup mushrooms, chopped
1 can chickpeas, drained and rinsed
7 ouncespenne pasta
1 cup canned coconut milk
1 1/2 cups vegetable inventory
1 tbsp dietary yeast
Juice of 1/2 lemon
2 tbsp cornstarch
1 tbsp tahini
Salt and pepper to style

Directions:
Warmth the olive oil in a non-stick pan and add the onion. Sauté for 2-Three minutes, till softened. Add the carrot and the mushrooms and cook dinner for an additional 3-Four minutes. Add the chickpeas, penne, coconut milk, veggie broth, dietary yeast and lemon juice. Simmer over a medium warmth for 12-15 minutes.Now stir within the cornstarch and tahini. Season to style with salt and pepper earlier than serving.
