Put together the cashew ricotta (or almond ricotta) and tomato sauce. You may make this forward of time as desired. (Alternatively, you should use store-bought vegan cream cheese and jarred marinara sauce).
Trim the ends of every zucchini and peel them lengthwise into ¼-inch thick slices utilizing a Mandoline or vegetable peeler. Chop up leftover zucchini and put aside to make use of for the filling.
Lay the zucchini slices on a big picket reducing board (or work floor) lined with paper towels. Sprinkle the slices with salt and put aside for five minutes to melt (this can make it simpler to roll them up later).
Within the meantime, warmth the olive oil in a big pan and sauté the onions and leftover chopped zucchini till tender and browned. Add the garlic and sauté for one more minute. Switch to a bowl and permit to chill barely. Then stir in chopped parsley, and pepper to style.
Preheat your oven to 392°F (200°C). Pour the tomato sauce right into a baking dish and put aside.
As soon as the zucchini slices are gentle sufficient to simply roll, pat them dry with paper towels.
Unfold cashew ricotta over every zucchini slice and high with sautéed onion combination. Roll up every slice and place the rolls side-by-side within the baking dish of the tomato sauce so they don’t unroll.
Spray the zucchini lasagna rolls with cooking oil (so that they don’t dry out) and bake for about 25 minutes, or till the rolls are frivolously golden-brown on high.
Take away from the oven then
