spicy peanut butter tofu
half pack agency/additional agency tofu, pressed of liquid and reduce into small cubes
half small onion, chopped
four cloves garlic, minced
sauce:
1/four cup pure peanut butter
half cup canned coconut milk
half cup water, extra to skinny as wanted
three tbsp tamari (gluten free soy sauce)
2 1//2 tsp harissa or chili garlic sauce
2 tbsp agave
half tsp salt
half cup cilantro, chopped
half lemon, juiced
four handfuls spinach
half cup frozen peas
1 cup rice, white or brown
Put together rice as instructed on packaging.
Warmth a skillet on medium warmth and sauce onion and garlic till aromatic. Add tofu and saute till tofu begins to brown/crisp (about 5-10 minutes). Whereas tofu is cooking combine your sauce elements collectively till mixed. Pour sauce into the pan with tofu and simmer on low till it begins to thicken. Including extra water if wanted to skinny out.
Add spinach and toss till wilted. Add cilantro, peas, and lemon juice. Modify taste to your liking, including extra salt, or chili garlic sauce for spice.
Serve with rice and extra cilantro!
