Comforting curry soup with noodles and tofu! This one’s prepared in round 15 minutes and packed stuffed with scrumptious flavours. Curry noodle soup
1 medium onion, diced
2 cloves garlic, minced
1 cup mushrooms, chopped
1 small zucchini, ribboned
1 can coconut milk
1 cup veggie broth
2 tbsp curry powder or vegan curry paste
1 tsp cumin
1 tsp turmeric
2 servings noodles of selection
2 tbsp tamari
1 tbsp rice vinegar
Salt and pepper to style
Tofu and sesame seeds, to serve
Add the onion and garlic to a pan and cook dinner for 3-Four minutes, till softened. Subsequent add the mushrooms and zucchini, cooking for 2-Three minutes extra. Add the coconut milk, veggie broth, curry powder, cumin and turmeric. Stir collectively and add the noodles. Cook dinner for round 5-7 minutes, or till the noodles are performed. Stir within the tamari, rice vinegar, salt and pepper earlier than serving with tofu and sesame seeds.
