Chickpea & Potato Pot Pie Turnovers

What you want:
filling: 2 tbl vegan butter, 1 cup small diced Yukon gold potatoes, half cup diced carrots, half cup diced celery, 1 diced small yellow onion, 1 tbls yellow mustard half tbl poultry seasoning , 1 tsp salt, half tsp pepper, 1 cup chickpeas, half cup frozen peas, Three tbl flour, 1 half cups veggie broth, 1/Four cup soy milk , 2 sheets of vegan puff pastry
What you do:
1️⃣in giant sauté pan, soften butter, add onions, carrots, celery, & potatoes, salt/pepper sauté on med warmth 15 min until tender
2️⃣ Add chickpeas, peas, mustard, & seasoning, combine till distributed
3️⃣Add flour, coating all veggies, cook dinner 2 min until flour will get golden
4️⃣ Add inventory, hold stirring, sauce will begin to thicken, add soy milk, hold stirring, add further seasoning if desired, simmer 10 min. Then let cool to room temp. Place in fridge for about an hour.
5️⃣ On a floured dusted floor, lower puff pastry sheet into 4, repeat with the opposite sheet.Roll out dough to make squares a bit thinner. Add 1/3 -1/2 cup to 1 facet to kind a triangle. Leaving a 1/Four in boarder. Dab boarder with water. Fold the opposite half of dough over to cowl filling.
