🍂 Sunday, comfortable, flavorful meals made with greens and served with mushy mashed potatoes and recent thyme. I’ve shared the recipe under!

* 1 onion
* 2 cloves of garlic
* 200g. Mushrooms
* 1/2 eggplant (200g.)
* 150g. Carrots
* 2 teaspoons of cumin
* 2 teaspoons of paprika
* 1/2 teaspoon of chilli (optionally available)
* 1 teaspoons of black pepper
* 1 teaspoons of salt
* 1 can of tomato puree (140g.)
* 1 liter vegetable broth
Wash and mushrooms, eggplant, carrots, onion and garlic. Prepare dinner on a pan with some olive oil. Add cumin, paprika, chilli, black pepper, and salt and cook dinner for a couple of minutes.
Add tomato puree and vegetable broth. Stir all of it collectively and cook dinner for 1 hour. Style and regulate if wanted. Serve with mashed potatoes and recent thyme.
