Black bean zucchini curry with rice

black bean & zucchini curry (serves 3-4)
-1 massive onion, diced (200g)
-Three cloves garlic, minced
-1 tbsp ginger root, minced
-Three dried pink chilis; non-obligatory
-spices: 1 1/2 tsp paprika, 2 tsp floor coriander, 3/Four tsp floor cumin, 3/Four tsp floor turmeric, 1/2 tsp floor cinnamon, 1 tsp salt, 1/2 tsp black pepper
-6 oztomato paste (170g)
-Three medium zucchinis, chopped (700g)
-3/Four cup water (180g)
-Three cups cooked black beans (500g after draining)
-1 cup full-fat coconut milk (200g)
In a big skillet, warmth some oil and add the onion. Cook dinner for five minutes, then add in garlic, ginger, pink chills, spices, and tomato paste. Stir till integrated. As soon as the combination is aromatic, add in zucchini and water. Cowl the pot and simmer on low warmth for 10 minutes. Add in black beans and coconut milk, then simmer once more for 10 minutes — or till the zucchini is tender. Season with extra spices if desired, then serve heat.
