Crimson Lentil Soup
1 cup crimson lentils
6 cups vegetable inventory
1 small onion
three garlic cloves
2 medium carrots
1 crimson bell pepper
1 heaping tbsp tomato paste
half tbsp paprika paste*
half tsp cumin
1 tbsp olive oil
Salt to style
Contemporary lemon, dried mint, chili flakes
*could be changed with harissa paste or 1 tsp paprika
Rinse lentils very nicely, and roughly chop onion, garlic, carrot and bell pepper. Warmth up olive oil and saute veggies for about 10 minutes on low to medium warmth.
Then add cumin, tomato and paprika paste and stir for a minute.
Add vegetable inventory and lentils, and produce every part to a boil. Simmer for 20 minutes, then use an immersion blender or switch to a blender and blend till easy. If wanted, add additional water or broth to achieve desired consistency. (Soup additionally thickens so much as soon as it cools down).
High with mint, chili flakes, and loads of lemon juice, and luxuriate in!
