TERIYAKI MUSHROOM UDON NOODLE STIR-FRY⁣

Serves: 2 ⁣

INGREDIENTS:⁣

​Teriyaki Sauce:⁣
✅1/Four cup soy sauce (or tamari)⁣
✅2 teaspoons darkish soy sauce ⁣
✅1/Four cup water ⁣
✅2 tablespoons maple syrup ⁣
✅half of tablespoon rice wine vinegar (or white vinegar)⁣
✅ 1 teaspoon minced garlic⁣
✅ 1 teaspoon minced ginger⁣
✅ Cornstarch slurry: 1 tablespoon cornstarch + 1 tablespoons water

✅100g udon noodles⁣
✅ 1 onion, sliced ⁣
✅ Three stalks spring onion, sliced ⁣
✅ 1 purple capsicum, sliced ⁣
✅ 300g mushrooms, sliced (I used combo of white button & shiitake) ⁣
✅ 1 tablespoon oil ⁣
⁣ ⁣

METHOD:⁣
1. Make the TERIYAKI SAUCE: In a small saucepan on medium-high warmth, mix the water, soy sauces, maple syrup, garlic & ginger. Carry to a boil, then add the cornstarch slurry & cut back warmth all the way down to a simmer. Cook dinner, whisking as wanted, till the teriyaki sauce is shiny & barely thickened. Modify seasoning to style with soy sauce/water. Put aside⁣

METHOD:⁣
1. Cook dinner the udon in keeping with packet directions. Drain & put aside.⁣
