TERIYAKI MUSHROOM UDON NOODLE STIR-FRY
Serves: 2
INGREDIENTS:
Teriyaki Sauce:
✅1/Four cup soy sauce (or tamari)
✅2 teaspoons darkish soy sauce
✅1/Four cup water
✅2 tablespoons maple syrup
✅half of tablespoon rice wine vinegar (or white vinegar)
✅ 1 teaspoon minced garlic
✅ 1 teaspoon minced ginger
✅ Cornstarch slurry: 1 tablespoon cornstarch + 1 tablespoons water
✅100g udon noodles
✅ 1 onion, sliced
✅ Three stalks spring onion, sliced
✅ 1 purple capsicum, sliced
✅ 300g mushrooms, sliced (I used combo of white button & shiitake)
✅ 1 tablespoon oil
METHOD:
1. Make the TERIYAKI SAUCE: In a small saucepan on medium-high warmth, mix the water, soy sauces, maple syrup, garlic & ginger. Carry to a boil, then add the cornstarch slurry & cut back warmth all the way down to a simmer. Cook dinner, whisking as wanted, till the teriyaki sauce is shiny & barely thickened. Modify seasoning to style with soy sauce/water. Put aside
METHOD:
1. Cook dinner the udon in keeping with packet directions. Drain & put aside.
2. Warmth up the oil in a wok on excessive warmth, stirfry the onions & capsicum for Three minutes till barely tender. Add within the mushrooms + half the Teriyaki sauce & prepare dinner for an extra Three minutes
