This recipe is good for meal prep for the entire week. You may serve it with rice, quinoa and different grains and even pasta. I additionally wish to make shakshouka with this stew?

Elements:
1 tablespoon olive oil
three carrots, roughly chopped
1 cup chopped celery
1 small candy potato, cubed
1 giant zucchini, cubed
1 pink capsicum, deseeded and chopped
four tomatoes, chopped
1 tablespoon tomato paste
half of cup vegetable broth/water
1 can natural no salt added chickpeas
salt and pepper, to style
Methodology:
Flip Immediate Pot on to “Sauté” and select the “Regular” warmth stage. Add olive oil and all of the greens. Prepare dinner, stirring sometimes, till the greens are barely brown, about 10 minutes.
Add in tomato paste, inventory and chickpeas, stir to mix. Shut the lid in your Immediate Pot and switch it on to Strain Prepare dinner for 40 minutes.
Serve the stew heat with steamed rice or grains of your selection and luxuriate in!
