Spiced Chickpea Bowl with Herb Tahini Dressing ๐Ÿƒ๐ŸŒฟ

Recipe:

1 cup cooked / rinsed canned chickpeas
1 tbsp oil
1/four tsp every kosher salt, pepper, cumin, floor coriander, paprika
2 parts salad greens
2 parts toasted pita or pita chips
1/four cup finely chopped or thinly sliced purple onion
2/three cup chopped seedless cucumber
Lemon wedges and additional herbs for serving

Herb Tahini Dressing (whisk collectively)
2 tbsp tahini (the runny sort)
2 tsp maple syrup or agave nectar
Juice of half lemon
1 half to 2 tbsp water to skinny the dressing
1/four tsp every kosher salt, pepper, garlic powder
1 tbsp every finely chopped recent parsley and dill
half tbsp thinly sliced recent mint

In a pan on medium warmth, warmth the oil and add the chickpeas and seasonings. Prepare dinner for four to five min, stir sometimes, till chickpeas are getting a bit crisp.

In the meantime, assemble two bowls with the salad greens, pita, onion and cucumber. Prime with the chickpeas and dressing. Add lemon wedges and extra herbs as desired.
