RECIPE Creamy Lemon & Tahini Pasta (serves 2-3)

Substances
1 tbsp olive oil
2 garlic cloves, minced
1 shallot, finely chopped

Sacue:
Three tbsp runny tahini
1 1/2 tbsp lemon juice
Three tbsp vegan parmesan (or dietary yeast)
150 ml water
salt & pepper to style

300g dry pasta

High with: lemon zest, vegan parmesan, freshly floor black pepper

METHOD:
– Cook dinner pasta al dente in accordance with package deal directions and reserve 100-200 ml of the pasta water.
– Combine all elements for the sauce in a bowl.
– Warmth olive oil in a pan and sauté shallots till virtually translucent, add garlic and stir-fry for an additional 30 seconds. Then add the sauce and convey to a delicate simmer on low warmth, slowly add 100 ml of the pasta water, combine till creamy. Take away from warmth and add the pasta. Add extra pasta water if too dry.
– High pasta with lemon zest, vegan parmesan & a lot of freshly floor black pepper earlier than serving.
