RECIPE:⠀

Dressing:⠀
three 1/2 tbsp apple cider vinegar⠀
three 1/2 tbsp additional virgin olive oil ⠀
2 1/2 tbsp entire grain French mustard⠀
salt & pepper to style ⠀
2 tbsp finely chopped dill⠀
⠀
Potatoes⠀
1 kg (2.2 lb) fingerling potatoes or different small yellow potatoes⠀
three inexperienced onions, finely chopped⠀
2 tbsp finely chopped parsley⠀
salt & pepper to style⠀
(+ boiling water & salt)⠀

METHOD⠀
Potatoes:⠀
– Reduce potatoes into ~2.5 cm thick slices, cook dinner in a big pan with salted boiling water. Cook dinner for ~12-14 minutes or till tender then drain and place in a big bowl.⠀
– Add the inexperienced onions, parsley salt & pepper, gently combine. Then add the dressing, combine nicely and ensure all potatoes are coated.⠀
Dressing:⠀
– Whisk collectively vinegar & olive oil then add remaining components and blend nicely.⠀
Crispy Panko Crusted Tofu:⠀
– Pat dry tofu with clear kitchen towel and lower in 1.5-2 cm thick slices, pat dry the slices and season with salt & pepper on both sides. Place flour combination, panko bread crumbs and cream/milk in three separate shallow bowls.⠀
– First coat tofu nicely in flour, then dip within the cream/milk and at last cowl with bread crumbs. Place in a heated pan with 1-2 tbsp rapeseed oil and fry on both sides on medium warmth till golden brown and crispy.⠀
