three 1/2 tbsp apple cider vinegar⁣⠀
three 1/2 tbsp additional virgin olive oil ⁣⠀
2 1/2 tbsp entire grain French mustard⁣⠀

2 tbsp finely chopped dill⁣⠀
1 kg (2.2 lb) fingerling potatoes or different small yellow potatoes⁣⠀

2 tbsp finely chopped parsley⁣⠀

– Reduce potatoes into ~2.5 cm thick slices, cook dinner in a big pan with salted boiling water. Cook dinner for ~12-14 minutes or till tender then drain and place in a big bowl.⁣⠀
